(909) A story written in bonito flakes


One of the oldest shops in Nihonbashi, "Ninben" (にんべん) -it has been in the area since 1720.



Its basic merchandise is dried bonito or "katsuobushi" (かつお節) like the one held by the gentleman in the picture while the shop clerk on the right explains how he can shave it and put it in his meals; katsuobushi is an essential ingredient in the dashi (出汁/だし) broth used in many of Japanese cuisine's classic recipes.



And of course, like all old stores, everything is done under the all-watching eye of the Shinto deities.
